Friday Favorites ~ The Cookie Edition
Cookies. To paraphrase my son when he was younger and enthralled with doughnuts, is there anything they can’t do?
Chocolate chip. White chocolate chip. Chocolate chunks instead of chips.
Chocolate with peanut butter chips. Or peanut butter with chocolate chips.
Oatmeal butterscotch. Oatmeal chocolate chip. Even, as I have aged matured, oatmeal raisin.
Crinkle cookies. Crispy cookies. Chewy Cookies.
A current house favorite lately is a sourdough shortbread with homemade toffee bits. But just shortbread in general? Yes, please, and thank you.
My beloved’s top cookie though is a cowboy cookie. Also known as The Laura Bush Texas Governor’s Mansion Cookies. When I first saw the recipe I just about fell out my chair…they call for all the things and each cookie is 1/2 cup of dough. That is a massive cookie, right? Everything really is bigger in Texas I guess.
Until recently I just couldn’t bring myself to do it though. Making a cookie the size of your face just seemed a little excessive but then one day I used my ice cream scoop to ladle out the dough and while I haven’t measured out to see how much dough it is exactly they are large cookies but so so good in that jumbo size! I haven’t been able to go back to the chintzy size and no one seems to care.
As a matter of fact they are my most requested cookie in my porch pickup so in case you want to try them but don’t feel like making them you can always hit me up for an order (shameless plug for my home bakery.)
However, I sent a batch of these to a mens meeting that he had on Wednesday and in less than 24 hours I have been asked about them twice. So because I am just a really nice person I am sharing the recipe with you today. To be honest I am not sure how closely it follows the original recipe anymore because the nature of baking and cooking to me is tweaking a recipe until it suits you and your people. In that vein I leave out the cinnamon when I make them for Rob because he prefers them that way.
Be warned that your mixer will get a serious workout because this is a stout dough and there is a lot of it. My kitchenaid could do it but struggled. My bosch mixer handles it okay though.
